Echinops ‘Star Frost’, commonly known as globe thistle, is a clump-forming herbaceous perennial grown for its distinctive, architectural flowers and bold foliage. It produces upright stems topped with spherical, steel-blue to silvery-blue flower heads in mid to late summer, which contrast with its deeply lobed, spiny, grey-green leaves. The plant is deciduous, dying back in winter, and is frost hardy once established and is tolerant of dry conditions once established, but does not perform well in poorly drained sites. It is commonly used in mixed perennial borders, naturalistic and prairie-style plantings, and as a structural accent, and its flowers are valued for attracting pollinators and for use in cut and dried arrangements.
